Lemon Chicken
Ingredients:
1 free-range chicken
2 cloves of garlic
1 large onion
3 carrots
3 medium tomatoes
2 lemons
White wine
Pepper
Olive Oil
Herbs – optional
Salt & Pepper
Preparation method
Remove the skin from the chicken. Place a whole lemon, well washed, inside the chicken.
Sprinkle with lemon juice, white wine, garlic and herbs to taste. Slice the onions, cut the
tomatoes into halves and the remaining vegetables into large chunks. Then, make a bed of
onions in a roasting pan and add a tablespoon of olive oil. Place the chicken on top of the
onions and the remaining vegetables around it. Place in the oven for 40 minutes and cover
with aluminum foil. Be sure to turn the chicken and baste with the white wine sauce.
