Wholemeal Pancakes

Ingredients:
3 eggs
1 cup of whole-wheat flour
2 cups of semi-skimmed or skimmed milk.
1 tea spoon of olive oil
Half a banana or half an apple
Cinnamon powder

Preparation method

Stir the eggs in a large bowl. Gradually add the flour and stir until of doughy consistency. Then
gradually add milk. The more liquid the dough gets, the thinner the pancakes will be. Then add
the oil and mix. Suggestion: if you want to make a slightly different version, add some grated
apple and cinnamon.
In a non-stick frying pan put a splash of olive oil. Remove any excess. Pour the mixture into the
frying pan and cook for a few minutes. When the mixture is cooked, turn the pancake over to
brown both sides.
Cut the banana into thin slices and place it on the pancake. You can sprinkle with cinnamon to
taste. If you prefer, you can put the banana slices sprinkled with cinnamon into a microwave
for a few seconds to give it a softer consistency and a better taste.
Serve with one cup of milk or a plain yogurt.
